We caught up with our WÜSTHOF Brand Ambassador Ben Knights and this is what we found out! 


What are you looking forward to most about coming back to Margaret River Gourmet Escape presented by Audi?

I’m looking forward to being in the Gourmet Village, there’s a cool buzz and excitement! Everyone is there to celebrate/enjoy food and it’s an added bonus that it’s held in the Margaret river region! What could be better?


Where are you from originally?

Originally I hail from Essex in the UK. 


What brought to you to Perth?

My family decided to make the move to Western Australia, I stayed in the UK for a couple of years, but after a couple of visits I realised I needed to be out here as well! WA is a beautiful place to live with an abundance of opportunities, especially for chefs! 


If you weren’t a chef, what would you be and why?

Before I started cooking the only other thing I had considered was being in the Police Force. I always wanted to be part of the K-9 unit, I’m a dog lover and that was my dream job until I fell into the kitchen… 


If you could collaborate with any Chef who would it be?

So, so many potential answers! Right now I’m a little obsessed with Sean Brock. 

I ate at Husk in Nashville earlier this year and was blown away by all the really well cooked food. I’d love to collaborate on an event with him.


What is your ultimate guilty food pleasure?

Any kind of sour jelly sweets, I’ve got a terrible sweet tooth! I can easily go through 2 packets after a long day.


What is the weirdest food you’ve ever eaten?

I’m not sure what makes something weird to eat, I’ve learnt that a lot of cultures snack foods can seem quite strange! 

I was in Thailand a few years ago and stopped at one of the street vendors, they were selling loads of different offerings but the one that caught my eye was deep fried chicken feet/claws. I gave them a shot, they were nice but really not a lot to them.

I do also really love eating green ants. I spent some time in the Kimberly region of Western Australia and got directed toward the green ants by a local. Every time you crunch one in between your teeth you get a burst of citrus. Imagine the little juicy caviar like capsules from a finger lime… green ants taste exactly the same!


Why do you choose WÜSTHOF?

I was attracted to WÜSTHOF from an early point in the kitchen! I remember specifically looking at the Classic IKON range and they did it for me.

They looked sexy, they looked cool, and they were expensive so that naturally meant to me they must be of a high quality.

When I got my first WÜSTHOF it cemented my love for them, I could use it all day long and my hand wouldn’t cramp the way it did with other knives. 

There are so many reasons I use WÜSTHOF knives, I could write an essay but I’ll just leave it at I use WÜSTHOF because they are the best.   


What is your favorite knife and why? 

Currently my favourite knife is the 23cm Classic IKON Cook’s Knife. It’s a decent size, not too big but also not too small.

It’s so versatile that I can, sometimes just use the one knife to complete all of my work for the day. I refer to it as my work horse! 


The sun is setting, we are in beautiful the Margaret River region, what are you sipping on?

It would have to be a Gin. The Limeburners Gin at last years’ Gourmet Escape was sensational! 

I’d have a triple shot of that topped up with a little cranberry juice, soda and fresh lime because I’m a sassy kinda guy!
