Biography

Seth James has built a name for himself as a leading player in the Margaret River dining scene delivering a uniquely local menu that has positioned Wills Domain as the number one restaurant in Western Australia, according to The West Australian Good Food Guide.

It’s no surprise considering his training ground working in Melbourne’s award-winning Cutler & Co. Dining room, owned by one of Melbourne’s most influential and successful restaurateurs, Andrew McConnell. Here he learned a refined and technique-driven style of cooking that enables him to deliver distinctly flavoursome, textured and beautifully crafted dishes that are a proud reflection of the region’s incredible produce.

Seth is also passionate about using fresh, sustainably produced ingredients and is on a first-name basis with all his suppliers. Whether it be sourcing abalone from the south, the finest Margaret River Wagyu, or vine-ripened produce from Mario they all contribute to his own distinct style of modern Australian cuisine.

This is James’ sixth year at Wills Domain and under his leadership taken the Restaurant to number 1 in 2018 and three West Australian Good Food Guide Regional Restaurant awards 14/15/17. The National Good food guide ranking Wills Domain 2 Chef Hats.

He’s also lauded by The Australian’s critic John Leathlean elevating him to Hot50 “hall of fame” with the winery restaurant also being elevated to a 1 Star rating in Gourmet Traveller.
