Biography

Leeuwin Estate Head Chef, Dan Gedge, commenced his career in the UK in 2000 with the Rick Stein group, where he worked for seven years before moving to the position of Head Chef at Custard Dining Rooms, which was recognised in the Michelin Guide and awarded AA Rosettes. Dan travelled to Melbourne in 2011 before discovering an affinity with the South West and settling. He joined Leeuwin Estate as Head Chef in April 2018. With a passion for the region and working with premium local suppliers, Dan continues the Leeuwin Estate food philosophy of combining exceptional seasonal West Australian produce, focusing on flavour, texture and aromas, with the Estate’s current and museum release wines. 

Leeuwin Estate recently completed a major refurbishment. As one of the founding wineries of Margaret River, the project was treated as a heritage restoration, paying homage to the Winery’s journey and transforming old spaces for contemporary usage. A steel and glass pergola over the front verandah extends the Leeuwin Restaurant’s alfresco dining season, along with the addition of a private dining room. The Art Gallery, originally a barrel room cellar, now offers a new function space and refurbished Gallery Cellar, as it showcases the collection of contemporary Australian artworks that feature on the labels of the Estate’s famed “Art Series” wines. Visitors can enjoy a range of experiences including behind the scenes Winery and Art Gallery tours, wine blending, cooking classes and tutored food and wine pairing sessions.
